Although it is recognized worldwide as being one of the finest alcoholic drinks, the champagne has a less known history. Dom Pérignon, the label of this drink, has its origins in the French region Champagne, and became nowadays a synonym for tradition, quality and success. Even though it became a luxury drink, the one who created it was a Benedictine monk, called Dom Pierre Pérignon. 300 years ago, Dom Pérignon (1638-1715) was in charge of the wine cellars of a monastery, situated in the historical Champagne region, and managed to improve the technique of champagne production, achieving the flavour that we all know today. The story says that when he tasted the drink, he exclaimed: ‘Come quikly, I am tasting stars!’ Consequently, in 1743, Claude Moët, a French winemaker, converted the monastery into a famous winery, keeping the name of the monk until today, for the best champagne they produced. Unlike other wines, the champagne undergoes a second fermentation, responsible for the much appreciated bubbles. The two selections of grapes which are usually used to produce champagne are Chardonnay (white grapes) and Pinot Noir (black grapes), depending on the type of champagne. Today Dom Pérignon is produced by the famous champagne house Moët & Chandon, part holder of the luxury products holding LVMH (Moët Hennessy • Louis Vuitton). The prices vary, reaching exorbitant prices sometimes, depending on the age. However you can find standard selections at reasonable prices. Dom Pérignon is definitely, one of the drinks that everyone should taste at least once in a lifetime!
